Vegan tapas: eggplant rolls, cucumber tartlets and baked baby potatoes with Barcelonia cheese

Want to enjoy some creative vegan tapas? These “platillos” (Spanish finger-food bites) are delicious and very easy to make!

For the eggplant rolls filled with Barcelonia Original Cream Cheese:

Ingredients (4 people):

  • 1 large eggplant
  • Barcelonia Original Vegan Cream Cheese, made with almond milk
  • Olive oil
  • Salt
  • Pepper

Preparation:

  1. Heat the oven to 180C/360F.
  2. Slice the eggplant into strips lenghtwise, make them as thin as possible.
  3. Place them on a baking tray lined with foil, drizzle some olive oil on them and season with salt and pepper.
  4. Roast in the oven for about 15 minutes.
  5. When they’re done, remove them and put them in the fridge to cool down for 10 minutes.
  6. Take the eggplant strips, flatten them out, and then spread a tablespoon of Barcelonia Original Cream Cheese on them. Roll up them and they’re ready to eat.
  7. Roll up and ready.

For the cream cheese andcucumber tartlets:

Ingredients (4 people):

  • 8 pre-baked mini-tartlet shells (available in most supermarkets)
  • Barcelonia Original Cream Cheese
  • Half a cucumber

Preparation:

  1. Fill the tartlets with half a tablespoon of Barcelonia Original Cream Cheese.
  2. Cut the cucumber into thin strips.
  3. Decorate each tartlet with a slice of cucumber on top of the cream cheese, as shown in the picture

For the baked baby potatoes with Barcelonia Herbed Cream Cheese:

Ingredients (4 perople):

  • 8 baby potatoes
  • Barcelonia Original Herbed Cream Cheese
  • Olive oil
  • Salt
  • Pepper

Preparació:

  1. Heat the oven to 180C/360F.
  2. Wash the potatoes and arrange them on a baking tray lined with foil.
  3. Season with salt and black pepper, and drizzle on some olive oil. Stir them around to coat with the seasoning.
  4. Bake for one hour, shifting and turning them frequently.
  5. Once cooked (check for softness) remove from the oven and let them cool for 5 minutes.
  6. Cut them in half and spread the open side with Barcelonia Original Herbed Cream Cheese.
